heirloom tomato salad with feta

Summer is the season for heirloom tomatoes, and this is my favorite summer salad. I like ordering this when eating out, but decided to make it myself. I was pleasantly surprised that it is easy to prepare and doesn’t require a lot of ingredients. It’s big on flavor though–so delicious!

Ingredients:

6-8 heirloom tomatoes in a variety of sizes and colors

1/2 tsp sugar

2 green onions

2 tbsp fresh or dried basil

aged balsamic vinegar to taste

extra virgin olive oil to taste

bread for serving

1/2 cup crumbled feta

Method:

Slice the tomatoes and layer onto a platter. Sprinkle with sugar, chopped green onions, basil and feta. Drizzle with balsamic vinegar and then with olive oil. Let stand at room temperature until ready to serve, up to 2 hours. Serve accompanied with bread for sopping up the delicious juices.
