This is probably my all time favorite Indian comfort food. I grew up getting excited over the sound and smells of rajma and rice being cooked by my mom. This is an attempt to make it as good as hers. I have tried the recipe using Anupy Singla’s Indian for everyone, by far my favorite Indian cookbook. Thanks Anupy for helping me gain the confidence I have needed in the kitchen. I highly recommend her books to anyone who wants to learn how to make Indian food at home. She is the real deal.
This dish (red kidney beans) cooks slowly for a while and has such a nice almost creamy texture to it that is heavenly. I don’t know what else to write here except make this!
