masala egg scramble

This is an attempt to make my dad’s famous Indian style scrambled eggs, which are loaded with spices, perfectly cooked eggs, and the most amazing texture of an any eggs I’ve ever had. He always makes more than enough because everyone wants seconds of these eggs along with buttered toast. He usually just piles the toast high onto a plate and everyone helps themselves to more as they run out!  The true test would be to have him try mine and critique it!

Ingredients:

4 eggs

1 tsp garam masala

1 tsp salt

1 tsp turmeric

1 tsp ginger garlic paste

1 tsp cumin

1/2 tsp red chili powder

1 small chopped red onion

i chopped tomato

Method:

Saute the cumin in oil until it sizzles. Then add onion and cook for 2 minutes. Add all spices and tomatoes and cook for 2-3 minutes until spices are fragrant. Turn heat to low and add eggs while slowly stirring in order to scramble. Once eggs are small enough and separate easily, turn off heat and serve immediately.

optional: garnish with dhania (coriander)
