one packet of chinese/ thai quick boil noodles
one 14oz packet of extra firm tofu cut into cubes and marinated in teriyaki sauce and a few dashes of sriracha
8oz sliced baby bella mushrooms
one chopped red onion
one chopped green pepper
2-3 cloves garlic
1tbsp grated ginger
3-4 tbsp soy sauce
3-4 scallions chopped
Marinate the tofu for 30 minutes before adding to lined baking sheet and bake for 20-25 min or until lightly browned.
Sautee the onions, green pepper, mushrooms and garlic until slightly tender and boil the noodles in the meantime.
Add baked tofu to vegetables. Then add noodles, ginger and scallions.
Toss everything while adding soy sauce and dash of sriracha (optional but yummy).
