These lentil burgers are hearty, flavorful and scrumptious! Sautéed scallions and mushrooms added to a mixture of lentils and peas give this burger excellent flavor and texture. I would make a double recipe since they will freeze well too. These can even be eaten at room temperature (I had one today for lunch). The lemon mayonnaise gives the burger a nice refreshing lightness and adds to the flavor. This is the first veggie burger I’ve ever made and I’m a huge fan!
