omelette for two

This recipe has been inspired by Ina Garten’s omelette for two. I decided to use red peppers, potatoes, spinach and onions (since that’s what I had at home). I also used nonfat shredded cheddar and 5 whole eggs. I omitted the bacon and cream. The baking time and temp are as per her recipe (350 degrees for 15 minutes or so). So basically, you can use whatever veggies you have and sauté them before adding beaten eggs, topping it off with cheese and baking it. Make sure your pan is oven proof!

This is such a nice treat to have on lazy weekend mornings. Don’t you just love that feeling of waking up and realizing it’s the weekend and you don’t have to get ready and go to work?! THE BEST FEELING EVER:)
