pumpkin risotto with roquefort cheese

I don’t usually like pumpkin flavored things and reluctantly made this dish after watching Giada make it on her show- I’m really glad I did. It wasn’t too sweet at all and the roquefort balances out the flavors nicely.

I would try this, especially if you have some leftover pumpkin puree from thanksgiving…
